1 bowl of sliced chicken

Chicken Kottu Roti is one of Sri Lanka´s favorite street food. Just like Mexican´s eat Tacos, American´s Hot Dogs, and the Japanese eat Takoyaki, Sri Lanka´s to go street food is Kottu Roti. When you first try it, you will get some familiar feelings as you eat this street food. It is very similar to Mexican Food! Why? Because the Mexican Flour Tortilla is nearly identical to Sri Lankan Roti; however, what makes them different, is the fact that Roti is a little bit harder, which makes it easier to cook with wet ingredients. For all of you who love to get a bite after a hangover or a few drinks, Chicken Kottu Roti is an ideal hangover meal! Just make sure you add enough Roti (Or Flour Tortillas) and make it super spicy!
Sri Lankan´s do not limit the Kottu Roti combinations to just chicken, you can add cheese, eggs, and any proteins that satisfy your palate!
I added Paprika to this recipe, to add some hot-pepper-like flavor without the spiciness of hot peppers, and also because it adds a lot of aromas.
Pan Fry the chicken skin to a crisp and sprinkle it on top!
It will add some savouriness, crunchiness, depth, crips, and umami! However, remember that you can easily substitute chicken for your favorite proteins. If you use steak, you can remove the fat and pan fry it separately, later chop the crispy and crunchy fat and add it on top of your Kottu Rotti!
